Clayton Rollison

Executive Chef

Clayton Rollison is a Culinary Institute of America grad who has worked at New York's famous Gramercy Tavern. In Nashville, he served as sous chef at the acclaimed Capitol Grille in the Hermitage Hotel.

The downstairs wait staff are outfitted in assorted suspenders and bow ties with casual white collared shirts, accented with black and white converse and the occasional newsboy cap or fedora.

The upstairs staff retain the suspenders, but in all black, accented by a crisp long sleeve white shirt, thin black tie and tie bar and sleek black trousers.
